The Appalachians are indeed not as tall as the Cascades or the Sierras, though North Carolina’s Mount Mitchell, which I have visited, is still pretty tall at over 6,600 feet (2,000 meters).
It doesn’t take me too long on the bike to get to that altitude ;o) and the house is at an elevation well over 98% of the Appalachian peaks, even before tops removed.
